Powerfully intense, with an exceptional depth of flavour, Barber’s 1833 Vintage Reserve Cheddar represents the pinnacle of two centuries of cheesemaking. It is made using traditional starter cultures and the finest West Country milk. Aged for at least 24 months, only when one of the Barber family judges it to be outstanding does it leave the farm as 1833. With a creamy texture and smooth finish, 1833 contains naturally- occurring crystals that give it a distinctive crunch. Refined sweet notes balance out its tangy sharpness. A cheese with unrivalled complexity and depth, savour it as part of a cheeseboard with apples, pickled walnuts and a tankard of Somerset cider.

Description

In 1833, Daniel Barber began making cheese on his Somerset farm. Nearly two centuries later and the family are still there, now the oldest surviving cheddar-makers in the world. They’ve made a few changes along the way but remain committed to making the finest farmhouse cheddar cheese, which needs the best West Country milk. Their dairy cows graze the lush pastures of Somerset and Dorset to produce rich, creamy milk that is transformed into PDO-accredited cheddar. They also work with many of the neighbouring farmers who supply additional milk and they’re proud to support the local farming community in this way.

They’re also the sole guardians of the country’s last remaining traditional cheese starter cultures — the ‘friendly’ bacteria that start the cheesemaking process and contribute to the final texture, aroma and taste. Only by using these cultures can they be sure that they’re making true West Country cheddar.
